2 Tablespoons orange juice concentrate
2 Tablespoons soy sauce
2 Teaspoons olive oil or toasted sesame oil
several drop of Tabasco sauce, to taste

Marinated Tofu with Cous Cous and Vegetables</strong></p>
<p><strong>Main Ingredients:</strong></p>
<p>1 package of extra firm tofu<br />

<em>*or you may substitute whatever vegetables you like</em></p>
<p>1 box of Cous Cous</p>
<p><strong><br />
Ingredients for Marinade:</strong></p>
<p>4 Tablespoons red wine vinegar<br />

2 Tablespoons soy sauce<br />
2 Teaspoons olive oil or toasted sesame oil<br />

<p><em>Note to make the tofu come out just right, allow yourself about 2 days before you wish to eat the dish in order to properly prepare the tofu.<br />

<strong>The Dish</strong><br />
1. Open the package of tofu, wrap in paper towel and drain all day. place a heavy object on the tofu will insure that all the water is pressed out.<br />
2. Place drained tofu in freezer bag and freeze overnight.<br />
3. the next morning, remove the tofu, wrap it in a paper towel and let it thaw all day.<br />
Doing this makes the tofu spongier and able to absorb the marinade better.<br />
4. Once tofu is thawed, cut into cubes.<br />
5.Prepare the marinade in a mixing bowl and then transfer to a large shallow bowl.<br />
6. Place the tofu cubes into the shallow bowl with the marinade and kneed them through the liquid.<br />
7. Cover the bowl with plastic wrap or wax paper and store in the refrigerator overnight.<br />
8. Prepare the cous cous as directed from the box.<br />
9. Sautee the vegetables in a large cast-iron skillet with a little bit of olive oil.<br />
10. Add the marinated tofu to the skillet.<br />
11. Add the remaining liquid from the toful bowl and let the tofu and vegetables simmer until all the liquid has been evaporated.<br />
12. Place a serving of cous cous on a plate and top with the marinated tofu and vegetables.</p>
